Today was an 'in the kitchen day' for me.  Yay!  I made sure to get everything else that needed to be done this weekend done yesterday so I could spend the afternoon today in the kitchen with no other worries hanging over me.  No guilt.  No pressure.  Just relaxed cookin' fun.

I love it when I'm able to get my schedule to cooperate like that.  As much as I love to cook, I absolutely do not enjoy it when it's done under time pressure.  Especially when I'm working on new recipes.

Which is what I was doing today.  Today I was test-driving some Thanksgiving dishes ... so Mark and I had a mini early Thanksgiving dinner tonight.  Those dishes need a few tweaks, so I don't have them ready to share with you today ... but I do have ...

... this really tasty Sauteed Cabbage with Bacon!

You know, cabbage is a vegetable that I tend to forget. 

Then I make it, and I say to myself, "Self, why don't you make cabbage more often?  You really should make it more often."

Then I look around to make sure no one sees me crazy-talking to myself.  Just kidding!  I don't really talk to myself.  Well, not out loud anyway. 

But I seriously should make cabbage more often ... 'cause I love it.  Especially when it's paired with bacon.  Doesn't bacon make everything better?  
And this sauteed cabbage is super easy.  All you have to do is shred (or thinly chop) a head of green cabbage ...
 

... and sautee it in a large frying pan with some bacon, salt, and pepper.  It's totally okay to heap your frying pan up with cabbage {like this} ...


... because it's going to totally cook down a lot  {like this}.

I'd love to have you back soon!    Sauteed Cabbage with BaconSource:  My Mom, who adapted from Cooking Light magazine 1 head green cabbage, shredded5 slices turkey bacon (or regular bacon), chopped1/4 c. water1 1/2 tsp. salt (or to taste)1/2 tsp. ground black pepper (or to taste)1 T. butter (optional) Saute chopped bacon in a large frying pan over medium-high heat (if using regular bacon, drain all but about 1 tablespoon of the drippings).  Add shredded cabbage to pan and reduce heat to medium.  Let cabbage cook down a bit, about 8-10 minutes, stirring frequently.  Season with salt and pepper.  Add the 1/4 cup water to the pan, cover, and let cabbage continue to cook an additional 8-10 minutes until tender.  Remove from heat and toss with butter until the butter is melted.  Taste and adjust seasonings, if needed. Enjoy!    This post is linked with Sunday Showcase Party, Mix It Up Monday, Mangia Mondays, Trick or Treat Tuesday, Totally Tasty Tuesday, Tuesday Talent Show, I'm Lovin' It, Weekend Potluck.
