Recipe: Heart Warming Cookies

I've been doing a lot of cooking and baking recently because I've been feeling a little low and I find food for one helps but baking is even lovelier, almost therapeutic and it's been like that for a long time. Baking and creating yummy food always makes me feel better. So here's a little recipe I cooked up to lift up my spirits and by the way they taste so good with the butter cream icing!Ingredients needed:
  • 500g of unsifted flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 225g butter
  • 325g caster sugar
  • 25g soft brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
    1. In a bowl combine the flour, salt and bicarbonate of Soda.2.In another bowl add together the butter, sugar, brown sugar and vanilla extract until smooth and creamy. In a cup beat together the eggs and add to the bowl. Then gradually beat in the flour mixture.
3. Combine to a dough like form and spilt the dough into 2. Roll them both into fat sausage like shapes, wrap in cling film and place in the fridge to harden.4.After 15-20 minutes take out the cookie dough and cut into chunks.5. Lay 2-3 baking trays with greaseproof paper and place the dough chunks onto the tray and flatten and round them into cookie like shapes. Turn the oven on at 190c and place the trays in there for 15 - 20 minutes.6. To check if the cookies have cooked, place a skewer into the middle of a cookie and it should come out clean.7. For the icing add butter to sifted icing sugar till thick and creamy. You'll only need one 1-2 teaspoons of butter for roughly 300g of icing. Add food colouring like lavender or cocoa powder to the mix to add colour and flavour. Decorate with sifted cocoa and serve.The cookies are soft and fluffy  and taste delicious with cocoa butter cream. The recipe makes a lot of cookies to! I hope you've enjoyed.
