Thanksgiving in quickly approaching and today I would like to share with you a family-favorite cookie recipe. Thanksgiving just wouldn't be the same at our house without these, hope you enjoy!
MOLASSES COOKIES
What you will need:
3/4 cup melted butter
1 cup sugar
1 egg
1/3 cup Molasses
1/2 tsp. of salt
1 tsp. Cinnamon
1/2 tsp. of ground cloves
1/2 tsp. ground ginger
1 3/4 cup self-rising flour
1/4 tsp. ground nutmeg
1/2 cup sugar(for rolling cookies in)
What you will need to do:
Mix together 1 cup sugar and egg until smoothly blended. Add in butter, mix in molasses.
In a separate bowl; mix the flour, salt, cinnamon, cloves, ginger and nutmeg. Mix together well.
Add the flour mixture to the wet ingredients, 1/2 cup at a time and blend together well. If the dough is too moist, you can always add about 1/2 cup more flour. Cover the dough, refrigerate about 1 hour.
Preheat the oven to 375 degrees. Form dough into small balls, a cookie scoop works the best. Roll each ball in the sugar. Place on a cookie sheet that is lined in parchment paper. Place about 2 inches apart.
Bake for 7-9 minutes or just until the tops are lightly cracked. Leave cookies on the sheet about 2 minutes then promptly remove to a wire rack for cooling.
Store in an airtight container when they are cooled completely. Enjoy!
