Recipe: Sweet & Spicy Vegetable Soup With Garlic Croutons
To contact us Click HERE Hello, as part of my new healthy diet I chucked some ingredients together to create a delicious sweet and spicy soup using everyday vegetables from the fridge. It's extremely healthy using a mix of yummy vegetables and I even tried out making garlic croutons to give it a little extra boost. Ingredients needed:
100g each of Sweet peppers, tomatoes and cucumber
seasonings {Salt&Pepper} and spices {Paprika}
1 Vegetable oxo cube
300ml of hot water
1Garlic Clove
1 slice of bread
Serves 1 - double, etc for more servings.1. Chop up the vegetables and cook in a pan on medium heat. Add 1/2 teaspoon of Paprika. In a heavy based pan add the oxo cube and hot water and leave on medium heat to create stock.2. Once the vegetables have slightly cooked after 10 minutes add to the stock. Add seasoning such as salt and pepper and a teaspoon of paprika.3. Cut bread up into small sized squares. Brush each side of the croutons once with garlic and then once with olive oil. Put the croutons under the grill for 1-2 minutes. Turn croutons over and grill.4. After 30 minutes puree the soup mixture with a blender and serve up.
